For our next Cooking with Capone recipe, we’re going to TACO-bout how to make this super scrumptious taco salad topped with lots of fresh ingredients and a hearty drizzle of Capone dressing. Follow along below!
Ingredients:
- 1 pound ground protein
- 2 cups favorite salad mix
- 1/4 cup cherry tomatoes (halved)
- 1/4 cup shredded cheese
- 1 packet taco seasoning
- 1/4 cup water
- 1/2 avocado
- 2 tablespoons of toasted corn kernels (use your favorite recipe or buy at your local market stand)
- 1-2 tablespoons of Capone (or the whole bottle, we won’t judge you)
- 1-2 tablespoons of your favorite salad dressing (we used jalapeño ranch)
Directions:
Heat large skillet on medium-high heat then add ground meat. Use a fork or spatula to break meat apart into smaller pieces for browning.
Once meat is browned, drain fat, add water and taco seasoning and mix.
Let taco meat simmer for 3-5 minutes on medium then let rest for 2 minutes to thicken.
Scoop 1/2 to 1 cup meat onto salad mix.
Add avocado, tomatoes, shredded cheese and toasted corn.
Drizzle Capone sauce over top, or mix with your favorite salad dressing and then drizzle.
